200 grams quality dark chocolate, preferably organic
1 cup organic macadamia nuts, chopped into rough pieces
1 cup organic dried cranberries (Cranberries are best but can be replaced with saltanas)
½ cup organic goji berries
2 – 3 tablespoons organic coconut oil (depending on how soft you want the final product to be)
Organic shredded or desiccated coconut
Melt the chocolate in a double saucepan. When melted, add the macadamia nuts, cranberries, goji berries and coconut oil and stir until completely covered.
Spread onto greaseproof paper in a thin layer and sprinkle shredded or desiccated coconut over.
Place into fridge until set, then break into pieces.
Store in fridge, as the coconut oil makes the chocolate nice and soft, but prone to melting.
You can put other ingredients in, such as sunflower seeds, different nuts and chopped dates.
